title: Oozing Warm Chocolate Lava Cake

I baked Chocolate Lava Cake last night!

My girl were jumping high and screaming "Yay, mommy is gonna bake again" to her younger sis.

They love cakes but I not often letting them eat, only if I bought one for myself then I will let them have some share.

Now ever since I started on my healthy diet, they even hardly eat as I should actually avoid those sweet stuffs due to the butter, eggs (i used organic here though since I have it in my fridge), sugar etc that's used. Unless I can find healthier and organic alternative to substitute. I will source around soon definitely.

So it have been a year since I last bake, stopped after not having maid a year back. Simply because I'm too busy with housechores; friends who know me well should know I'm freaky clean and hence take longer time when come to washing things. I don't have that time to do even more washing of all the cookwares.

I would love to let my girls take on the role and do the baking one day. Amabel did her first baking lesson last year Christmas and she did mention again that she's very interested to bake again. This is a simple recipe so it will be a good one for them to bake themselves. How about doing a kids baking session for their group of friends.
Great idea right! Should suggest it to my mommy friends.

It was really a very simple recipe and I succeeded in making it to the right consistency on the first attempt (chocolate oozing out when cut in the middle).

Omg...look at the warm & oozing runny chocolate goodness. It was so yummilicious and taste exactly the same as what served in the bakery.


This recipe can makes 3x 6oz ramekin cakes but my home only have the 8oz ramekin so ended up I baked 2 ramekin cake with the chocolate mixture filled the ramekin slightly more instead.

Here the recipe shared by my gf, Carin 😘😘 and is actually from noobcook

Ingredients
- 100g dark chocolate (example, Cadbury Old Gold 70% cocoa), cut to small cubes
- 100g unsalted butter, cut to small cubes
- 2 eggs
- 50g caster sugar
- 20g self-raising flour

To decorate (optional)
- icing sugar and small sieve
- any berries
- ice cream

Additional tools needed
- spatula
- electric whisk (hand-held)
- oven safe ramekins (6-8 oz)

Directions
1. Melt dark chocolate and butter using either the microwave, a hot water bath or a double boiler.


2. In a large bowl, use an electric whisk (you can whisk by hand too but it’s more tedious) to beat the eggs and sugar till the mixture turns pale and frothy. This will take a few minutes.

3. Pour melted chocolate and butter you prepared in step 1, into the egg mixture prepared in step 2. Stir in the flour. Use a spatula to mix everything evenly.

4. Grease your ramekins with some melted butter (so that the cake will come off cleanly when it is baked).

Fill the ramekin almost 3/4 full with the chocolate mixture and bake in a preheated oven of 180C (356F) for about 10 minutes. If bake using 2x 8oz ramekin may take slightly longer.

The cake is deliberately slightly undercooked so as to achieve its ideal consistency which is runny in the middle but if you over-bake it, you will get a super moist chocolate cake which is yummy too.

5. When it is baked, remove ramekin from oven and let cool for 1-2 minutes. Use a spoon to gently loosen the edges.
Carefully invert the cake onto serving plate.

6. Serving suggestion: Use a sieve to dust icing sugar over the cake. Serve a scoop of ice cream and some berries at the side.
