title: Mee Sua with Egg Yolk and Spinach

Babies 1 year old can be introduced to egg yolks. Eggs are truly one of nature's super foods, and most of the nutrients are found in the yolk. Egg yolk contains carotense, essential fatty acids, choline, vitamins A, E, D and K. It is also a source of B vitamins, calcium, iron, phosphorus, zinc and folate. Chickens fed special diets can produce eggs that are rich in omega-3 essential fatty acid.

Only recently I thought is better time to test Amabel on egg yolk since she's already 14 months. No allegies so far, so am going to cook the mee sua with egg yolk for her this time.

The first time I coooked for her , I never added the egg yolk as she is still under 1 year old.

And she loved it so much


And I prepared Me Sua with Egg Yolk and Spinach for her today


Ingredients:

Water
Mee sua (fine wheat noodle)
Egg Yolk
spinach
Homemade pork stock


1. Bring the water to the boil in a small pot. Blanch the mee sua for 2 mins, then drain and rinse with cold water.

2. Cut the mee sua into small pieces and set aside.

3. Hard boiled a egg

4. Wash and drain the vegetables. Pluck the leaves and discard the stems. Chop the leaves up finely.

5. Bring the homemade stock to the boil in a pot. Add the vegetables and mee sua and cook for 5 minutes or until the vegetable are soft and cooked.

6. Tranfer the mee sua soup to a small bowl and top with the egg yolk. Allow it to cool a little before serving.
